Here are a few recipes created for you in the kitchen of Highland Foods. Use the favorite Maple Pepper ® seasoning of your choice!

Salad Dressing

Ingredients:

	1 tablespoon Maple Pepper ® 
	2 tablespoons warm water
	1/3 cup wine vinegar
	2/3 cup olive oil
	1 teaspoon oregano or Italian seasoning
	

Directions:

Measure ingredients and place in a cruet or similar container. Shake thoroughly. Allow dressing to sit for one hour and enjoy it on your favorite garden salad. It also makes a tasty marinade for meats, poultry and vegetables. (Makes one batch.)

Barbeque/Basting Sauce

Ingredients:

	1 batch of Salad Dressing
	1 cup ketchup
	

Directions:

Use Salad Dressing made with Maple Pepper ® and mix with ketchup to have yourself an excellent barbeque/basting sauce for meats and poultry.

Maple Corn

Looking ahead to summer and fresh corn on the cob? Tantalize your taste buds with a few (or several if you wish!) hearty shakes of your favorite Maple Pepper ® seasoning on your warm, buttered ear of corn. Pure heaven!

Salmon with Pizzazz!

Rinse and pat dry salmon fillets. Drizzle a little olive on fillet and sprinkle generously with Maple Pepper ®. Bake, broil or grill as you prefer!

Grilled veggies

Cut a selection of your favorite vegetables put them in a big bag and mix with a little olive oil. Remove vegetables from the bag, placing them on a baking sheet. Generously sprinkle Maple Pepper ® over them. Roast for about 30 minutes (depending on how large the pieces are) at 350 or 400 degrees. Broil at the very end for a nice crunch.

Maple Pepper ® Seasoned Scallops

Clean scallops, spray with a little olive oil and roll in bread crumbs and Maple Pepper ®. Sear each side for a few minutes and you are done.

Maple Pepper ® Pig Candy

Liberally sprinkle slices of bacon on both sides with Maple Pepper ® w/Habanero. Place on a baking sheet and bake in the oven at 350 until crisp. Wonderfully delicious!

Pork Loin

Ingredients:

	5 tablespoons brown sugar
	2 tablespoons paprika
	1 tablespoon Maple Pepper ®
	1 tablespoon lemon pepper
	1 tablespoon chili powder
	1/4 teaspoon ground cloves
	1/4 teaspoon crushed red pepper
	1/4 teaspoon nutmeg
	1 tablespoon savory
	2 teaspoons granulated garlic
	2 teaspoons seasoned salt (I use Mrs. Dash)
	1 teaspoon onion powder


	5 - 6lb pork butt trimmed or loin
	3 cups apple juice (I just baste with frozen juice)
	1/3 cup apple brandy (I omit)
	

Directions:

Rub pork with dry mix and marinate overnight. Cook in oven for three hours at 325 degrees. Baste with apple juice and brandy and return to oven 10 minutes.

Sensational Sweet Chicken

A great tasting sweet chicken done on the grill. You will need whole chicken breasts (skin on).

Directions:

Soak in salted water for 3-4 hours (drain & rinse & pat dry).

Sprinkle Maple Pepper ® seasoning generously all over both sides.

Place breasts on a hot (preferably charcoal) grill, rib side down first.

Cook slowly for 10 minutes then flip.

Cook skin side for about 5-7 minutes (it may flame).

Flip again to rib side for two minutes (add a sprinkle more of Maple Pepper ®) then flip one final time for 2-3 minutes.

Remove and enjoy!

Maple Pepper ® Summer Potato Salad

Using your taste buds as your personal guide, toss your prepared potatoes in a mixture of Maple Pepper ® w/Garlic, cinnamon basil, garlic, honey mustard, brown sugar and balsamic vinegar in mayonnaise. Guaranteed to be a hit at your summer barbecues.

“Fire on the Mountain™” Chili

Use a slow cooker for this one- it really enhances the sweet vs. spicy mix. The sweet maple balances out the fiery habanero very nicely. However you make it, make sure to use PURE maple syrup, and Maple Pepper ® w/Habanero. Its an AWESOME spice for any dish!!!

Servings: Feeds 8. No leftovers, guaranteed!

Prep Time: 30-45 minutes

Cook Time: 2-16 hours

Ready In: 2.5-17 hours

Ingredients:

	12 oz. PURE maple syrup
	8 oz. canned tomato sauce
	1 large can Bush’s maple baked beans
	1 package (1 lb.) MICROWAVED thick-cut bacon
	1 lb. chicken breast (marinated overnight in maple syrup)
	1 lb. ground chicken
	1 cup chopped RED onion
	1 clove garlic, minced
	16 oz. canned stewed tomatoes
	5 habanero peppers
	1 tblsp. Maple Pepper ® brand seasoning w/habanero
	1 tblsp. chili powder
	

Directions:

  1. Combine syrup and tomato sauce in slow cooker. Strain baked bean juice into food processor. Add baked beans to slow cooker.
  2. Microwave bacon. Cut into 1/2 - 3/4 inch pieces. (You MUST microwave to keep the bacon soft and moist)
  3. Cook chicken breast as desired (I like to grill it.). Cut into small pieces.
  4. Brown red onion with garlic in pan. Add ground chicken and cook thoroughly.
  5. Add all bacon and chicken and onions to slow cooker and stir.
  6. Strain juice from can stewed tomatoes into food processor. Add stewed tomatoes to slow cooker.
  7. Cut habanero into small pieces. (WEAR GLOVES!!!) Add to food processor.
  8. Blend peppers and liquid until no pepper remains. (I kept seeds from two of the peppers and put into food processor for added heat.)
  9. Add mixture to slow cooker and stir.
  10. Add Maple Pepper ® and chili powder and stir.
  11. Slow cook for 2 hours or more. (I cooked mine for 10 or 12 hours. The longer the better.)
